As many of you know, I am from New Orleans, by way of Texas. We eat rice with everything! When Minute® Rice asked me to check out some new ways to use rice during National Rice Month, I was very excited. Rice is typically served as a simple side dish, which is fine. But how many times have you had rice for breakfast or dessert?  Minute® Rice will allow you to create nutritious and delicious dishes – from appetizer to dessert – that you and your family love.

We attended a super fun party at a friend’s home to try some yummy and clever ways to use Minute® Rice.  I love getting together with my blogger buds! They’re always so much fun and I learn a ton!

Next course…a beautiful Greek Salad with a Crunchy Rice Cake on top.  If you like the nutty, rich flavor of brown rice, Minute 100% Whole Grain Brown Rice is a delicious, nutritious option, as it has similar nutritional values as regular long cooking brown rice, but is ready in just 10 minutes, – ¼ the time!! Both Minute Brown and White Rice are gluten free, too.

Greek Salad with Crunchy Rice Cake

Finally, a yummy Apple Tart with Rice.  A rice dessert that isn’t rice pudding – love it!  I adored these little two-bite cuties. The chef’s tip was to prepare the Minute® Rice Brown Rice according to package instructions, but use apple juice and a little cinnamon instead of water. Brilliant!  Pop it (chilled) into a pre-made tart shell and top it with some apples sauteed in some butter,  a bit of sugar and cinnamon. You don’t even have to bake it!

Make a salad a little more filling by adding rice, or even try a sweet rice pudding for a treat that will change up your family’s typical brownie or ice cream dessert go-to’s.  Do you have leftover veggies or a rotisserie chicken on hand? Minute® Rice can easily be paired with some of your leftover ingredients or other fridge and pantry staples to make a quick, easy and wholesome meal. It’s been raining here in Atlanta for three days straight, so I made some Chicken and Rice Soup.

Easy Chicken and Rice Soup Recipe using Minute Brown Rice

 

Ingredients

  • 3 boneless, skinless chicken breasts or 1 rotisserie chicken off the bone
  • 2 medium carrots (peeled and diced)
  • 1 stalk celery (diced)
  • 2 cloves garlic (minced)
  • 1 Small onion, chopped (shallot also works, if you prefer a milder onion flavor)
  • 4 bouillon cubes (I’ve also made this with broth, simply adjust the amount of water you add later)
  • 1 1/3 cup Minute® Rice (white or brown)
  • 2 teaspoons paprika
  • lime
  • fresh parsley (chopped)
  • salt and pepper to taste

Note

I love the addition of a little lime juice to finish off this recipe, and my DH likes to add a few slices of fresh avocado to each bowl.  We don’t love cilantro, but if you do, try swapping it for the parsley. This dish is very easy to adjust to your family’s tastes. For example, you can add green peas or pimento, extra carrots, fresh dill, bay leaf or whatever you like.

Directions

Step 1
Heat a large pot over medium heat with 1/2 – 1 Tbsp olive oil. Add shallot, garlic and a pinch of salt and cook 1-2 minutes, until softened.
Step 2 Add 6 c water and bouillon cubes, increase heat to high. When boiling, add chicken, 1 1/3 c rice, 2 tsp paprika, carrots, and celery. Let boil for 1 min, then reduce to simmer and cover.
Step 3 Remove chicken from pot when fully cooked, 10-12 minutes. Let cool for a few minutes, then shred using two forks (this step isn’t necessary if you use rotisserie chicken). Let soup continue to simmer for 10 minutes, then return chicken to pot. Cook until rice is tender and chicken reheated, 2-5 min.
Step 4
Salt and pepper to taste. If desired, add a squeeze of fresh lime juice and some chopped parsley.
Step 5 Serve with a squeeze of lime and some chopped parsley.
