We had to send cupcakes to a Fall Festival this past weekend and DD wanted to do something “creative and memorable.”  No biggie, right?  I thought maybe a marzipan acorn on top, or a caramel filling of some sort. I love cupcakes and was excited!  Not really what she had in mind, though.  We were destined for two clever varieties of these little treasures, courtesy of my overly creative child.  She masterfully harnessed the power of Fruity Pebbles in one cupcake, and made a more “traditional” cupcake with a Halloween-colored Oreo cookie baked inside.  Both were very tasty, met with lots of “oohs and ahhs” at the festival, and then went pretty fast.  (When we got back, I wanted to kick myself for not taking pictures of these creations… duh.  In a home where many meals are served cold because I have to take pictures first, and there is often a coin flip to see who gets the “money plate” that was set up for the shot!)

Indeed, if the whole grad school thing doesn’t work out for her, she definitely has a future in cupcakes, and it includes Pop Rocks and potato chips!  At any rate, I continue to be fascinated by the crazy rise in the popularity of cupcake shops and the accompanying TV shows.  I’ve found this cool infographic from chef2chef.net about this very thing to help grasp what’s really happening in this miniature cake business and also a list of 16 fun cupcake recipes from AllFreeCopycatRecipes.com  

DD has inspired me and I think I’ll try the Elvis cupcake next.  What could possibly be bad about a cupcake that has bacon in it?!?!
