Creamy Avocado Pasta – Guest Post #DailyDoseofDesign

Hope you’ve all have a spiffy Memorial Day!  OK, so technically, I’m home now from the amazing trip my daughter and I took together this month. Now the problem is that I’m so jetlagged and worn out. You know how they say you need a “vacation from your vacation?” Well, that’s definitely true! I’m going to be at the office this week…resting. You have all been so gracious and kind to my stellar guest Adriana from Daily Dose of Design .  I’m so happy to let her take over the Nest one more time with a fabulous, simple recipe that I’ll be making this evening with some grilled chicken. Avocado is one of my favorite foods and a little something light and healthy is just what I need after all the crazy eating we’ve been doing!

I’m one to always love finding and trying new recipes – especially from Pinterest. Some I love and some I wish I never tried, but one thing that’s for sure is that my love for avocados is never ending, so I HAD to try this creamy avocado pasta! Let me tell you, it is now one of my favorite meals ever. It’s super easy, too. I’m so glad I tried it and I will definitely be making it again soon – and often!!

You’ll need:

12 ounces pasta of your choice – I used rotelle, but most of the time I use linguini

1-2 tablespoons lime juice (fresh if possible, but not a deal breaker!)

1/2 teaspoon dried basil leaves

1/4 to 1/2 teaspoon salt

Ground black pepper (optional)

2 avocados

Cherry tomatoes (optional)

Instructions
1. Cook the pasta according to package directions.IMG_7714

2. While it’s cooking, peel and pit the avocados.  Place avocados in food processor with the lime juice, salt, basil and pepper and blended until creamy. Salt to taste.  If you don’t have a food processor, you can easily mash up the avocado mixture with a fork.

3. When the pasta is finished, drain and toss with the avocado mixture in a serving bowl. Add cherry tomatoes, if desired. Try it with bite-sized pieces of grilled shrimp or chicken.

Serve and enjoy! Super simple recipe and super yummy. I have this almost weekly for dinner, it’s one of my favorites.  Enjoy!
