Turkey and Black Bean Burritos or Chimichangas

Our version of a Better Homes & Gardens recipe, these burritos are quick, healthy and full of flavor! We've also created a vegetarian version for our daughter that can be found here.

Ingredients

  • 6 whole wheat, low carb tortillas
  • 6 10 inch whole wheat, low carb flour tortillas
  • 1/2lb ground turkey or chicken (uncooked)
  • 1/2 Medium yellow onion (chopped - more if you like)
  • 1 can black beans (15 oz., rinsed and drained; or 1 1/2 cups cooked black beans)
  • 1 can diced tomatoes (14 1/2 oz., drained - we use roasted tomatoes with garlic added)
  • 1/2 cup your favorite salsa (we're not good with hot stuff, so mild is good for us!)
  • 1/4 cup chopped, fresh cilantro (optional)
  • 1 tablespoon lime juice
  • 1/2 teaspoon cumin
  • 1/2 cup Monterey jack cheese (reduced fat or fat free, for topping)
  • sour cream (light or reduced fat, fot topping)

Note

Directions

Step 1 In a large skillet, cook the ground turkey (or chicken) and onion until the meat is no longer pink and the onion is softened. Add the black beans and smash them slightly with a fork
Step 2 Stir in tomatoes, salsa, cilantro, lime juice and cumin. Simmer over low heat for 10 minutes.
Step 3 When you're ready to assemble, warm tortillas in the microwave or oven to soften them up and make them easier to roll. Spoon about a 1/2 cup of warm filling onto each tortilla. The filling should be place just below the center line of the tortilla. Fold the bottom edge up and over the filling. Fold in each side of the tortilla over the filling. Roll the whole package up from the bottom to form the burrito.
Step 4 If you're having burritos, you're done! Add some shredded cheese and sour cream (inside or outside the burrito) and enjoy.
Step 5 If you're going for the chimichangas, place the burrito, seam side down, onto a baking sheet lightly sprayed with with nonstick cooking spray. Bake 10-12 minutes in a 425 degree oven until they are golden brown. Sprinkle chimichangas with cheese. Add sour cream, if desired.
