Skinny Lasagna

 

Every year, my husband requests lasagna for his birthday dinner. I know it’s coming, but I’m never prepared for the day long preparation of making the sauce and mixing up the cheese filling. Not to mention boiling the noodles and trying to keep them separated and in whole pieces. Finally, the mess and sheer number of dishes required is enough to send me to the grocery store to pick up a frozen lasagna and call it my own.

That has all changed now. Red Gold Tomatoes shared their super easy recipe for lasagna and I’m sold!  I didn’t even have to boil the noodles first. What?!? I made their healthier version of lasagna for New Year’s Day and feel pretty confident that I (or my husband who makes nothing but scrambled eggs) can have lasagna any month of the year now. The Laura’s Lean Beef, by the way, was the perfect addition without all the fat. It’s nice to have an option other than ground turkey.

Simple All-In-One Skinny Lasagna

You will never miss the calories in this lighter version of Classic Lasagna. Skinny Lasagna uses lean ground beef, low fat cheeses and whole wheat lasagna noodles to lower the calories and fat, and double the fiber! A hearty and flavorful lasagna you won't feel guilty about eating, only 330 calories per serving!

Ingredients

  • 1/2 cup water
  • 1 can (28 ounce) Red Gold® Crushed Tomatoes, or 2 (15 ounce) cans Red Gold Crushed Tomatoes
  • 2 cans (14.5 ounce) Red Gold® Diced Tomatoes with Basil, Garlic & Oregano
  • 1 teaspoon Italian seasoning
  • Ground black pepper to taste
  • 1lb Laura's 96% Lean Ground Round, or ground turkey, cooked and drained
  • 1 box (16 ounce) traditional whole wheat lasagna noodles
  • 1 carton (15 ounce) low fat cottage cheese
  • 2 cups shredded low fat mozzarella cheese
  • 1/2 cup grated low sodium Parmesan cheese

Directions

Step 1 Preheat oven to 350o F. In large mixing bowl combine water, crushed tomatoes and diced tomatoes, black pepper, Italian seasoning and ground round, stir to combine ingredients in the sauce.
Step 2 Cover the bottom of a 9x13x2 inch baking pan with 1½ cups of sauce mixture. Arrange 1/3 of noodles on top of sauce, slightly overlapped. Top with ½ of cottage cheese, ½ of mozzarella cheese and 1 cup of sauce. Repeat layers and top with last 1/3 of noodles and the remaining sauce. Sprinkle with Parmesan cheese.
Step 3 Cover tightly with foil and bake for 1 to 1½ hours; until noodles are cooked. Let stand for 10 minutes before serving.

  1. I add half beef and half sausage to my lasagna recipe. Sometimes I’ll add in some mushrooms. I also make a yummy vegetable lasagna that is fully packed with eggplant, zucchini, squash, and spinach! YUM!

  2. Whn I make Lasagna I like to add mushrooms, Italian sausage and chopped meatballs, we like our Lasagna meaty and spicy… lol
