Hummingbird Cake

A delicious tropical blend of fruit and cake that is an old fashioned favorite!

Ingredients

  • 2 cups sugar
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 1/2 cup oil
  • 3 Large eggs (beaten)
  • 2 cups ripe bananas (diced)
  • 1 1/2 teaspoon vanilla
  • 1 can crushed pineapple (8 oz.. with juice)
  • 1/2 cup chopped nuts (pecans, walnuts, your favorite. We like macadamia nuts.)

Note

This recipe came from my grandmother and is so easy to make.  The hardest part is peeling the bananas!

Directions

Step 1
In a large bowl, sift together the sugar, flour, salt, cinnamon and baking soda.
Step 2 Add the oil, eggs, bananas, vanilla, pineapple with juice, and nuts. Stir to blend. Do not beat.
Step 3
Pour into a greased tube pan. Bake for 1 hour and 15 minutes at 325 degrees.
Step 4 Cool in pan on a wire rack. Run a knife along the edges to loosen and remove from pan to a serving plate. Serve with whipped cream, whipped topping, or by itself.
