So, if anyone tells you that when I got my Spiralizer, I spiralized everything in sight for two whole weeks (including three very full weekends,) I might deny it. Unfortunately, it would be super easy to tell that I was full of crap. I have a terrible poker face and my family’s hair was beginning to curl from all the spiraled food I was feeding them.  The truth is that I was, and still am, extremely smitten with my Spiralizer, to say the least. Weird? Maybe. But I’m OK with that.

I’ve finally had a chance to pull together some of my favorite Spiralizer recipes and a few more that we’ll be trying soon. If you’re new to the Spiralizer, I recommend starting with Ali at Inspiralized. I learned a TON from her website, she saved me a lot of time and she has a great assortment of recipes and ideas.

Because I’m a huge beet fan (again…I’m OK with that no matter how much teasing I get from it,) I’ll start with this beautiful beet salad…
